Loaded Hash Browns

This is one of my new favorite meals! I tend to make this when I come home from a busy day and I'm ravenously starving. It can be as simple or fancy as you would like, and it takes about 20-30 minutes to make.

Here are some ingredients I used:

Diced frozen potatoes

Sweet potatoes

Spinach

Sweet onion

Bell pepper

Corn

Canned chicken (shredded)

Canola Oil

First, put about a tablespoon of oil in a frying pan and make sure it covers the bottom of the pan. Put the diced frozen potatoes in the pan on high. I diced up a sweet potato and steamed it before putting it in the frying pan with the frozen potatoes.

While the potatoes were grilling, I cut up a bell pepper and some sweet onion and tossed them in the pan along with my canned chicken. Next, I steamed some corn and threw that in the mix as well. I cut up the spinach into fourths before I steamed it and put it in the hash browns. It's important to put the corn and the spinach in right before the potatoes are almost done. If you put the corn in too soon, then it will start popping out of the pan.

I love this recipe because you get your carbs, protein, healthy fat, and veggies all in one pan!
