Banana Coconut -Mini-Muffins

Mini banana coconut muffins are the perfect grab and go breakfast item and snack!
Here are the ingredients:
2-3 overly ripe bananas
1/3 cup of melted coconut oil
1 tps of baking soda
Pinch of salt
1/2 cup of sugar (optional)
1 large egg, beaten OR 2 Tbsp of apple sauce
1 tps vanilla extract
1 1/2 cups of flour (GF or non-GF)
Preheat the oven to 350. Mash the overly ripe bananas in a mixing bowl until they are a smooth mush. Stir in the melted coconut oil. (It usually takes about 20-30 seconds to melt the coconut oil). Next, mix in the baking soda and salt. If you're feeling really healthy, then you skip putting in the sugar. Apple sauce is my favorite egg substitute! If you are out of eggs or are allergic to eggs then use apple sauce, if not, then use an egg.
All that's left is to add the vanilla and flour! I have mini muffin tins that I like to put the banana coconut muffins in. It takes them approximately 6-8 minutes to cook.
