The Yogurt Parfait

This homemade granola is SO yummy! Especially with yogurt and berries.

Here's what you need to make it:

4 cups old fashioned GF oats 2 cups rice krispies 1-2 cups of sliced almonds

1-2 cups of sliced pecans 1/2 cup brown sugar, packed (Optional) 3/4 cup of coconut oil Sprinkle cinnamon

Add any other nuts or seeds that you love!

Mix all the dry ingredients together in a large bowl. If you are feeling healthy, then do not add the brown sugar. (The coconut oil is a natural sweetener). Melt the coconut oil in the microwave and then pour over the dry ingredients. Sprinkle as much cinnamon as you desire onto the granola.

Spread the granola evenly on a cookie sheet.

Cook at 350 degrees for 10-15 minutes stirring every 2-3 minutes OR cook at 200 degrees for 30 minutes, stirring every 10 minutes. If you like your granola at little more toasted or crunchy then cook it a little longer. Whatever you do, make sure that you stir your granola frequently. Coconut oil burns faster than butter.

After your granola is done, add some Greek yogurt—honey vanilla is my favorite but it is not low-calorie. If you are looking for a low-calorie yogurt option, then I would recommend training your taste buds to eat plain Greek yogurt. Add your favorite fresh or frozen fruit and enjoy!

*SPECIAL NOTE: If you have Celiac disease or are very allergic to gluten then do NOT put the rice krispies in this granola.
