Lemon Stir-fry

I love homemade stir-fry and there are so many different ways to make it!
Here are some ingredients you could use:
Chicken OR Shrimp
Corn
Peppers of all colors and sizes
Green Beans
Carrots
Celery
Broccoli
Sweet Onion
Lemon Juice
Lemon Pepper seasoning
Olive Oil
And any other veggies that you have in your fridge!
Before you start making your meat or cooking your vegetables, remember to put some brown rice in your rice cooker. If you are not the biggest fan of brown rice then you should try cooking it in coconut water on your stove top. It delicious! White rice is okay too.
Now you can worry about your chicken (OR shrimp) and veggies.
I grilled the chicken in water and lemon juice on the stove top. I also sprinkled some lemon pepper seasoning on top of the chicken. If your chicken is raw and your frying pan it hot it should take around 10-15 minutes to cook.
I would not recommend cooking your stir-fry in coconut oil because it will leave a coconut flavor on your vegetables. I would recommend olive or canola oil. I recommend lightly-steaming/cooking the broccoli, celery, and carrots before frying them with the other vegetables. If you chose to put corn in your stir-fry, make sure that it's the last vegetable you put in your frying pan. The corn will pop out of the pan if it gets to hot so make sure to watch out for that. It should take around 10-15 minutes to grill your vegetables.
