Apple Carrot Muffins

These apple carrot muffins are GF and vegan and so healthy and yummy!

Here's the ingredients:

1 1/2 tablespoon flax meal soaked in 4 tablespoons of water

1/4 cup olive oil

1/3 cup mashed (ripe) banana

1/4 cup honey (or maple syrup)

1/2 cup organic, unsweetened applesauce

1/2 cup brown sugar (optional)

1/2 teaspoon sea salt

1 1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 cup almond milk

1 heaping cup (packed) grated carrots

2/3 cup GF rolled oats

1 2/3 cup GF all-purpose flour blend

1/4 cup chopped raw walnuts

1/4 cup raisins (or craisins) (optional)

Preheat the oven to 375 degrees.

Mix the flax meal with the hot water and let it soak 5 minutes. Add the mashed banana, honey, olive oil and stir. Next, add the apple sauce, brown sugar (if you want it), baking soda, salt, cinnamon, and stir. Add almond milk, then add the grated carrots. Add oats and gluten-free all-purpose flour. Last, add the walnuts and raisins if desired.

Pour the muffins into your mini-muffin tins and bake for 9-10 minutes.

Take them out to cool and enjoy!
