Stuffed Peppers With Wild Rice

Stuff peppers is the absolute best meal to make when you have leftover rice! I had some wild rice left over so I put some black beans in rice and made it a meal!

Here are some of the things you can put in your stuffed peppers:

Chicken/pork/beef

Black Beans

Wild/Brown/white rice

Peppers

Sweet onion

Mushrooms

Corn

Carrots

Celery

Cheese (if you aren't dairy-free)

And anything else that sounds yummy to you!

To make the wild rice that is show in the picture, I put the rice in a rice cooker. I diced up green pepper, sweet onion, mushrooms, and grated the carrots and cooked them on the stove before I put them in the rice. I also had some black beans left over so I mixed those in with the rice.

Whatever you do, heat up the rice, beans, meat, and whatever else you are putting in your pepper before you put it in the pepper! Unless you are making it fresh, then you don't have to worry about heating anything up.

I cut the pepper in half and cleaned out all the seeds so it looked like this:

Then, I put the rice and bean mixture into the pepper. I put the pepper on a cook sheet and baked it for 5 minutes at 350 degrees. It's all ready to eat when you take it out of the oven!
